We went to a Professional and Amateur British BBQ Championships 

at the Laverstoke Park Farm’s Field to Fork Festival

Top Tip on using a Kettle BBQ is to put the coals on only one side of the BBQ. 

Hence you can brown the meat over the hot coals then move it to the other side 

and put the cover back on. You would then be "roasting" the meat.
